Sweet and Sour Cabbage

This is one way of using the leftover cabbage from my Golabki recipe. It’s simple and delicious. It looks better if you save some of the darker green cabbage leaves but I had to use them for my Golabkis.

4 to 5 cups of leftover cabbage or fresh cabbage chopped

2 medium onions

2 tablespoons of butter

salt and pepper to taste

1/4 cup of white vinegar (more to taste)

3 tablespoons of sugar (more to taste)

Cover the chopped partially cooked cabbage (or fresh chopped) with water and bring to a simmer. Saute the chopped onions in butter in  non stick pan until translucent. When the cabbage is the desired consistency for your taste. Drain well. Place cabbage back into the pot and add the butter and onions. Salt and pepper to taste and saute. Add the vinegar and sugar and mix well. Simmer for a few minutes. Add more sugar and vinegar if desired. Serve as is or with homemade Polish potato noodles mixed in. (Recipe coming soon).
