Sour Cream Cucumbers

No introduction is needed with this one. We have all had them before. These go great as a side dish with any Polish meal.

Ingredients

4 cups of packed thin sliced cucumbers

salt

1 tablespoon of white vinegar

2 tablespoons of sugar

1 cup of sour cream

Directions

Peel and slice cucumbers. Place in a bowl and sprinkle with salt. Let sit for about 10 minutes. Mix all the other ingredients in a separate bowl until the sugar is dissolved. Mix with the cucumbers and place in the refrigerator for at least 15 minutes for the flavors to blend.

This is one of my favorite things to eat. When my Father was alive, he had a BIG garden every year. We would take breaks from working in the garden and come in to the kitchen and make this WONDERFUL dish. I can still see him eating this with sour cream running down his chin. Thanks for sharing this dish Ken. Polish yummies.

My husband Jeff is making this cucumber salad for the first time since childhood–I just sampled before he put in fridge for 15 minutes–it is “yummy!”–Thanks Ken

Ken,Your blog has caused quite a stir today, and provided many memories for our family. Your Mom brought many of these recipes into our lives. It blesses my heart to think of the two of you cooking together. Keep up the good work! Aunt Joyce

      • Aunt Joyce, it’s really funny the response I’ve gotten and the number of hits on that recipe. Kinda funny what a simple 5 ingredient recipe can do. I had 100 views on my site after posting that. That was my second best day, Ken
